Description The project aims to make a rather complex industrial research and development activity for increasing technical and scientific knowledge capable to identify a new and unique methodology for producing olive oil based innovative emulsions, particularly coming from the biological chain. The project is focused on the design of a fully new emulsification process capable to produce olive oil with a controlled texture and spreadable, allowing several industrial application that in turn will increase remuneration through the broadening of the current production. This matches the needs of the productive branch, characterized by few innovation recovering competitiveness, by opening to market offering new products maintaining the olive oil natural and healthy appeal. It is well accepted that the extra virgin olive oil has a rather stable market value, whilst other products as virgin and “lampante” oils have a lower value and consequently are often used as poor byproducts or to make blends of oils after refining in the particular case of the lampante oil These byproducts often represent a residual of the extra virgin oil production coming from the residual of the extraction process due to olive harvesting not on the tree or to an over ripening at the end of the season, because they show a rather high acidity level. This project aims to use those materials to create new products that are not low price competitors of extra virgin oil, but they are other products with a higher added value. Recently consumers requirements are more addressed towards certified biological productions according to cultivation constrains and biological extra virgin olive oil is following this market trend that seems to be well remunerative. In this case the loss due to production residuals as virgin oil or quality lampante oil is more severe, thus their use as different products has a great industrial interest. Main objective of this project is therefore an industrial research and an experimental development aimed to increase the added value of the byproducts of the biological olive oil industry by making emulsions addressed to the following applications: i) Semi-finished emulsions as substitute of butter to make frozen short dough and puff pastry, with the appeal of healthy and low cholesterol content products; ii) high commodity emulsions with new packages (pouches, sticks, gas bottle, small pot) with high food safety (pasteurization, closed package) with special dispensers to be addressed to catering (schools, hotel, mensas) or to breakfast and lunch; iii) emulsions enriched with aromas or other active principles to make new biological product lines in the field of creams and structured dressings; iv) semi-finished emulsions addressed to cosmetics as base cream capable to entrap and transport active principles and thermal maintaining their effectiveness. By matching these objectives and recovering part of the byproducts of the biological production, it is obtained also a reduction of the environment impact by transforming residuals and waste into products by applying only physical processes (emulsification).
