Description Encapsulation is an emerging technology in food science with a bewildering array of application. In this project different encapsulation technologies, well known in pharmaceutical field, will be used to develop encapsulated food ingredients that could be applied in different areas of food industry. The common objective of the various activities is to improve quality and safety of the products containing encapsulated ingredients The flow chart of the activity is • Selection of bioactive components (OR1) • Their encapsulation to develop bioactive ingredients (OR2) • Use of these ingredients in foods, active packaging and feeds (OR3) • Evaluation of quality and safety of the products containing these ingredients (OR4) • Implementation activity with validation of prototypes (OR5) Project is guided by the Department of Food Science (DSA) which has in the team researchers having a specific expertise on the encapsulation. DSA also coordinates a project on nanoencapsulation in the frame of FP7. Partnership includes Tecnoalimenti, a consulting society with long experience in this kind of project, CODAP that will work on vegetable beverages that could be used as alternative to cow milk; FLEXPACKAGING that will deal with flexible packaging in food sector and ICI which is a pharma company having expertise on encapsulation and that recently set up a research centre on probiotic and bioactive bacterial metabolites. Potentiality of encapsulation technology in terms of controlled delivery and release, dosing, thermostabilization of bioactive components in different food matrices, will be investigated using different bioactive compounds, namely: • Probiotic bacteria • Phages • Proteins such as bacteriocin and intensive sweet proteins • Low molecular weight phenol compounds having different applications Encapsulation of bacteriocins, phages and essential oils will be carried out to coat plastic materials with the final goal to develop active packaging. This innovative tool will be used to improve quality and safety and to prolong the shelf life of various foods. Encapsulation of nutritionally relevant compounds such as isoflavones, polyunsaturated fatty acids (PUFA) and vitamins, which are largely destroyed during the processing, will be adopted to improve the nutritional quality of soy milk or almond milk as models of the vegetable beverages which are commonly used as alternatives to cow milk. Finally encapsulation will be used to develop new functional products using two approaches. In the first one probiotic bacteria will be encapsulated to increase their stability during shelf life and the efficacy of their administration. This material will be used to prepare feed able to reduce of antibiotics and improve the quality of the resulting meat. The second approach is to develop satiating food ingredients by encapsulating bitter compounds (polyphenols) and sweet compounds (edulcorating proteins) with the aim to deliver them directly to the intestinal taste receptors. These receptors trigger the secretion of intestinal hormones inducing satiety and therefore they have the potential to reduce the whole caloric intake. The controlled release can increase the functionality of this functional compounds and will open new perspectives in the products for weight management one of the most promising sector in the functional foods area. The achievements of project objectives will give to the company joining the project specific know how about this “habilitation technology” and development of new products tailored for their specific sector.
