Description The present proposal seeks to answer, in terms of technologies, to an industrial sector characterized by low production margins and by an increasing innovation requests. For this purpose, the project research intends to review the dairy production chain, starting from the study/development of feed endowed with specific functionality, through processing technologies, biotechnological protocols, up to the study/development of innovative packaging technologies to extend the shelf life of the final product. These activities will aim to develop innovative dairy products with functional and healthy features. The range of products will consist of: - functional and “native” versions of fresh stringy cheese, in particular: i. Mozzarella and Burrata and with “indigenous microbiological markers potentially functional” ii. Mozzarella and Burrata with healthy improved lipid fraction iii. Lightened Burrata with or without probiotics yeast - Symbiotic Cheese Spread - Nutraceutical whey/sheet based drink - Functional milk based drinks: o delactosed where the sugar component glucose + galactose is below 1,6% and the lactose residue is below 0,05% o formulated for infants where the presence of casein is less than 0,35% and that of ß-lactoglobulin is less than 0,03%. The research will include the development of high security packaging systems to extend the shelf life of products through use of combined packaging techniques (in fact it will act both during the process and the packaging steps). The planned activities are: - Feed study to improve the nutritional dietetic profile of cow's milk. - Research and development of biotechnological protocols for the “functionalization” of fresh stringy cheese and cheese spread. - Research and development of process/product to create innovative probiotic whey based drink. - Research and development of a process for the lactose physical removal from cow's milk. - Design and testing of a process for the separation of ß-lactoglobulin from whey protein. - Study and optimization of packaging. It is expected that research project results will enable the project partners, and indirectly to the whole sector, to quickly strengthen the market position and thus raise the production competitiveness. However the training course, project related, will increase the development capacity through the integration of figures endowed with expertise and capacity in the R&D staff diary companies. Moreover, in order to carried out different phases of the project, it is expected that the partners make use of contractors that, trained in the co-proposers Universities and Research centers, will collaborate with the technical departments of companies in the laboratory and experimental activities.
