FINGERIMBALL is a design concept that combines food profiling of excellence extrapolated primarily with omics technology and nanotechnology and aimed to create a Hight Quality Food identity card with the new ICTs.The dataset obtained will be added on a microchip that in turn are the key to a smart new packaging developed with the aim to combat the rampant counterfeiting of food products made in Italy and especially the brand of excellence also subject of Italian sounding phenomenon, an imitative counterfeiting.
The project aims, with an approach completely original, innovative and multidisciplinary, a solution to these phenomena whose contrast is one of the pillars of the past and, especially, the future EU policy, national and indeed regional.
Italy is amongst the countries most affected counterfeiting: three out of four foods are forgeries, ranking second after France, two out of three Italian dishes made with not original ingredients. The phenomenon is, unfortunately, not intended to increase our quality products and brand PDO, PGI and TSG or traditional, defended at the global level.
The countries where most are concentrated agro-piracy are U.S, Australia, New Zealand and China. The most serious type, the illegal counterfeiting of branded products, the U.S. has an incidence of 70% of exports. Sales of products that mimic - or at least refer to Italy, the Italian Sounding - exceed ten times of those really Italian.
On supermarket shelves around the world, for every Italian food there are four counterfeit. More precisely, this proportion false/true is:
- in North America (U.S. and Canada) 10/1;
- in Europe 3/1;
the rest of world (non-EU countries and outside North America) 2/1.
Currently, the contrast is represented by agro-piracy legal weapons including mandatory labeling of origin and the control and repression, albeit intensified recently at various levels, are insufficient and above are very expensive and work retrospectively.
Introduce systems that can protect the production of excellence by implementing technologies to combat counterfeiting becomes an imperative.
Based on these considerations, the project, which sees a strong collaboration between different universities and research centers and companies operating in the territories of the convergence will develop innovative systems to combat counterfeiting of food on the international market.
The working hypothesis involves the construction, for every high quality product, the fingerprinting on authentication selectively encoded and stored on an innovative miniature microchip self-maintained. The chip will then be integrated in a package for its innovative features not only cannot be altered but contain within it the information necessary to authenticate the product inside.
It will therefore developed a micro-reader at different levels of accessibility 'of small and "easy human interface." The Micro-reader will have different functions: to provide relevant consumer product information on proper storage, the production system, the terroir of that product not only as a place of production but as a place holder for cultural values. The same player may be given to official control bodies in place to verify the authenticity of products and receive information on quality. The system is still supported by a track and trace open source platform designed specifically for its excellent production and a platform for knowledge management, which should become the property information base on which to convey the complete information of spatial composition and analytic on registered products and made available, with varying levels of security, official bodies, to protection agencies, researchers.
