Description Scientific research on nutrition has shown that there is a wide range of substances which have a nutritional and physiological effect on humans, such as for example vitamins, mineral salts, amino acids, essential fatty acids, fibre, herb extracts, and so on. In recent years, though, a growing number of products have appeared which claim these elements on the label or through advertising. The nutrients promoted with these indications may be perceived by the consumer as containing nutritional, physiological or, in general, positive health benefits and as such are differentiated from other conventional products on the market. This creates an undoubted commercial advantage because it may directly influence purchases. The European Commission with EC regulation no. 1924/2006 therefore deemed it necessary to intervene by establishing general principles applicable to advertising and labelling of this particular type of food product, in order to guarantee a higher level of consumer protection and full awareness of purchasing choices. These can be included on the packaging and/or labelling of the product, as well as in related informational advertising. On the basis of surveys taken using various methods (and like traditional opinion polls) Italian consumers would be willing to pay a premium on products of Italian origin. From the point of view of the market, there is an ever-growing shift all over the world towards food products with some bearing on health. This project, which focuses on conferring "value" on traditional Sicilian agricultural food production through activities which award innovative aspects in production processes and more competitiveness in the markets in question, can be summarised in the following ORs/activities: OR 1 - ANALYSIS AND IDENTIFICATION OF TRADITIONAL FOOD PRODUCTION AND IMPLEMENTATION OF BIOTECHNOLOGICAL PROTOCOLS FOR THE PRODUCTION OF FOODS OF HIGHER HEALTH POTENTIAL• Encouraging the production of oils to be cultivated from native Sicilian germplasm with higher biophenol content;•Improving production of edible olives to be cultivated from native germplasm with higher functional value and definition of biochemical parameters of the health and nutritional value of Sicilian extra virgin olive oils;•Creation of a line of condiments based on extra virgin olive oils flavoured with essential oils of officinal plants with related analytical and organoleptic characterisation of the qualitative and sensory profile;•Development of health products from Sicilian grain cultivation (bread, pasta) in relation to the genotype, the environment, the cultivation technique and the conditions of storage of bran and grain;• Enhancement of traditional grains for the production of pasta with functional characteristics;•Implementation of protocols of production of horticultures aimed at exalting the nutritional and health characteristics of vegetables produced in greenhouses through the use of innovative covering film;OR 2 - IMPLEMENTATION OF OPERATIONAL METHODS FOR THE PRODUCTION OF FUNCTIONAL AND NUTRITIONAL FOODS• Increasing the functional value of extra virgin olive oils through enrichment of biophenols of different plant origin;•Selecting and producing antioxidant molecules for therapeutic and environmental purposes from vegetation water and pomace, as natural sources; •Producing traditional and "healthy" fresh pasta obtained from Sicilian grains to be dispensed through a newly designed vending machine;•Enhancement of prebiotic mixtures in the pasta through integration of beta-glucans extracted from caryopsis of barley and Saccharomyces cerevisiae wall;
