Description	The aim of the project is the development and testing of an innovative technological solution, based on natural ingredients such as pectins extracted from citrus fruits or some molecules with antimicrobial activity isolated from the same products which will be applied, can significantly improve the shelf- life of fish and agricultural products. In particular, it will develop an innovative gel-like substance to be applied (through techniques, technologies and procedures developed under this project) on the investigational product in the form of an invisible, odorless and tasteless "edible films" to slow down senescence of the products increase the shelf-life. In details, the purposes of the project can be reduced to two macro-areas: project and implementation of the protocol of production of the pectins enriched film and project and implementation of the method of lay of film on the food through the specific tool. We will work step by step starting by the individuation of the best pectin mix to whom we will add, through an accurate research work, natural compounds of antimicrobial action (yeast and/or peptidi) and other natural substances (wax) in order to find the best combination for the extension of the shelf-life. The pectins mix should be validated through chemical analysis in order to control the maintenance of the organoleptic characteristics of the products, genetic for the valuation of the senescence and microbiological. The whole system will be apply both on fruits, obtained through conventional and biological agriculture and fish, fields in which the conservation of products in the period between the gathering and the consumption has an expensive cost. Through the validation of the protocol of preparation of the edible film of pectine and the project and realization of the tools for the application of the film mix we should solve the problems of the present technology obtaining an important profit for the interested field.
