The project envisages the creation of a public-private partnership between 20 co-proposers based in Puglia, Calabria and Sicily, of which 10 are private enterprises, 6 are universities, and 4 are research institutions. There will be a total of 26 implementing partners and a further 6 third parties, of which 3 are based outside the area of intervention. A program of integrated and synergistic scientific and technical activities to develop the competitiveness of the Southern Italian cereal productive chain is being proposed by the partners.
The planned project will combine skills and experiences gained by the private sector partners (seed producers, crop growers and processors) with those developed by public research organizations in the fields of genetics, varietal breeding, agronomic management, processing, marketing and training. The training will encompass all of the fields mentioned above.
Agronomic protocols (both technical and managerial factors) will be tested over a network of 10 sites, representative of the variability of the southern terrain in order to identify types of grains suitable for different areas. This activity will involve 16 partners (growers, seed producers, processors and research laboratories) and will enable the development of new models for sustainable cereal productive cycles.
The genetics activities will involve 6 research institutions who will seek to identify: new alleles for crop quality, nitrogen use efficiency, resistance to water and heat stress, introgression lines, enzymes involved in grain nitrogen metabolism, molecular markers for MAS protocols, SNP markers characterising varieties with better quality and adaptability, genotypes resistant to cryptogamic diseases (wheat rust etc.), quality and food safety protocols, verifiable tools for traceability in the food supply chain.
Varietal establishment activities will involve 10 public and private partners, working in different environments, who will seek to identify varieties resistant to cereal rust, to grow and assess genetic materials, to identify native genotypes resistant to water and heat stress characterized by adaptability and quality, and to identify new lines to propose to the RNV (National Varieties Registry).
For the activities relating to processing, partners from the private sector (both primary and secondary processors) (8), crop growers (4) and research institutions (9) will work together on qualitative and technological aspects. Protocols will be developed for milling with low energy requirements whilst respecting environmental concerns and the bioactive compounds of the caryopsis, seed decortication techniques, compound separation/enrichment of the flour/bran blend and other cereal grain flours for use in bakery products with high health and/or nutritional value.
For secondary processing, research partners will develop: “traditional” types of pasta suitable for industrial processing whilst enhancing bioactive compounds of raw materials and microbial inocula in order to enhance aromatic and organoleptic characteristics; protocols for new products (bread, pasta, other bakery products) based on diploid wheat and oats, alone or in combination with durum wheat, and processing technologies to enhance the functional and technological properties of prime materials for the development of new ranges of dietetic and nutraceutical products.
The creation of a database with DNA markers for the different species and varieties analyzed during the project; the development of new traceability methods for the identification of varieties, finished products and contaminated compounds for food safety purposes, to certify and ensure product authenticity and the origin of the manufacturing process.
The innovations and technologies identified by the project will be introduced into the supply chain so demonstrating ways to create increased competitiveness in the Southern Italian cereal cultivation productive chain.
